Afegim l'aigua bullint &amp;nbsp;a la farina i remenar només una mica, ha de quedar una massa semblant a la del pa, ben espessa. La quantitat d'aigua és orientativa, potser haurem d'afegir-ne més.&lt;br /&gt;Posem la massa dins d'una xurrera o d'una màniga pastissera i amb compte fiquem els xurros directament dins d'una paella amb oli calent. Un cop desfeta, li afegim el sucre i els rovells batuts i ho remenem tot molt a poc a poc. Muntem les clares a punt de neu i les afegim a la xocolata, barrejant-ho bé. Rectifiquem de sal i deixem que es faci el sofregit. Afegim seguidament el brou i quan estigui bollint, les llenties. Les deixem a foc mig. En un recipient adient posem les cloïsses amb una mica d'aigua i les deixem uns 6 minuts al microones fins que estiguin obertes. Les afegim a la paella quan trobem les llentien tendres, juntament amb el seu brou, mirant de no abocar l'arena que duen. Després posem una mica de llet en el mateix bol perquè es remulli bé el pa. Mesclem la carn de vedella i de porc amb l’ou batut, el pa mullat desfet i una mica de sal i pebre. Formem les mandonguilles, les enfarinem amb la farina d’arròs i les fregim en oli ben calent. Les reservem.&lt;br /&gt;&lt;br /&gt;Marquem els daus de sípia en una paella i els reservem. Fregim els alls a la mateixa paella amb una mica d'oli, afegim la ceba picada i tot seguit el pebrot verd. Afegim les mandonguilles, la sípia i el vi blanc. Ho deixem coure un parell de minus i després ho cobrim amb una mica d'aigua. En una paella amb oli fem el porro, quan estigui tendre afegim totes les verdures excepte la tomàtiga. Passats uns minuts afegim la tomàtiga, sal i una mica de sucre. Passats uns deu minuts afegim l’arròs, remenem bé i afegim el brou. Rectifiquem de sal i deixem coure uns vint minuts. Si ho voleu fer realment com es fan els risottos heu d’anar afegint de mica en mica el brou així com es va eixugant l’arròs i, finalment, afegir una mica de mantega abans d’escudellar.&lt;br /&gt;Aquesta recepta es molt bona de fer i de menjar. Afegim el gra d’all, el tallem a velocitat 5 durant 4-5 segons. Programem 2 minuts a velocitat 2, temperatura varoma. Afegim el porro, el tallem a velocitat 4-5 durant 5-6 segons i programen 5 minuts a velocitat 2, temperatura varoma.&lt;br /&gt;Reservem una parell de xampinyons i la resta la posem al got, els tallem a velocitat 4 durant 5-6 segons i programem 7 minuts a velocitat 2, temperatura varoma. Quan acaba afegim el vi i el brou i programem 15 minuts, velocitat cullera, temperatura varoma. En acabar la cocció deixem refredar un parell de minuts i triturem a velocitat màxima durant uns 10 segons. Finalment afegim la nata líquida.&lt;br /&gt;Els xampinyons reservats, els netegem, els tallem en juliana i els saltegem amb una mica d’oli. El pa sense gluten el tallem a daus i el fregim fins que torni una mica daurat.&lt;br /&gt;Servim la crema acompanyada amb el xampinyons i el pa fregit. Quan estiguin transparents afegim els bolets i tot seguit l’albergínia i el carbassó. Tot seguit programem 2 minuts a velocitat “espiga”.&lt;br /&gt;Deixem tovar la massa mitja hora aproximadament. Passat aquest temps l’estirem fent la forma de la coca. Deixem la massa tovar durant 1 hora aproximadament, coberta amb paper vegetal una mica banyat d’aigua, dins del forn a 50º de temperatura.&lt;br /&gt;Quan hagi doblat el seu volum el posem dins del forn a 180º durant 25 o 30 minuts, amb un got d’aigua dins el forn. El traiem del motlle quan encara es calent. Podem tallar-lo en llesques i congelar-les. El deixem coure 20 minuts a temperatura baixa, el colem i el reservem.&lt;br /&gt;Tallem les verdures i ratllem la tomàtiga. En una paella amb oli d’oliva daurem el porro i el pebrot, quan estiguin fets afegim la tomàtiga i ½ culleradeta de sucre i ho deixem fer un parell de minuts al foc. Afegim l’arròs, remenem i afegim el fumet calent. Passats uns deu minuts afegim els llagostins que havíem reservat tallats i ho deixem coure tot uns 10 minuts mes. Afegim la pell de la llimona i triturem uns segons a velocitat 9. Afegim la mantega i un dels ous i batem a velocitat 4 uns 10 segons. Per últim afegim la farina i amassem 10 segons en velocitat 6.&lt;br /&gt;Estenem la massa en una superfície plana, tallem les galetes segons la forma que vulguem i les col·loquem en una font coberta amb paper vegetal. Les fem uns petits forats amb una forqueta, les pintem amb l’ou que ens quedava batut i les tirem sucre per damunt.&lt;br /&gt;Les posem al forn encalentit a 180º uns 5-10 minuts fins que veiem que les galetes estan daurades. Mentre es fan podem escalfar la llet fins que estigui tèbia. Desfem el llevat en la llet.&lt;br /&gt;Fem un puré amb les patates bullides simplement amb una forqueta i les afegim la mantega. Batem el puré per fer-lo cremós. A continuació afegim la llet, l’ou i la farina tamisada sense deixar de remenar la massa. La deixem tovar durant una hora tapada amb un pedaç humit dins del forn encès a una temperatura aproximada de 50º.&lt;br /&gt;Passat aquest temps anem fent els bunyols formant petites bolles de massa amb les mans i fent-les un forat al mig amb els dits polze i índex. Els fregim així com els anem fent en oli ben calent. Quan són daurats els podem deixar damunt de paper de cuina per llevar-los l’excés d’oli i tot seguit els arrebossem en sucre.&lt;br /&gt;Ens sortiran una dotzena de bunyols aproximadament, si en voleu fer una quantitat mes grossa podeu provar amb 3 ous, 250 ml de llet, 250 g de farina sense gluten, 1 kg de patates, 1 cullerada de mantega, 1 dau de llevat L’Hirondelle, oli i sucre. Després poseu una mica de llet en el mateix bol perquè es remulli bé el pa.&lt;br /&gt;Mentre, piqueu els talls de pernil i el pit de pollastre en un robot de cuina. Si no en teniu podeu comprar la carn de pollastre ja picada i picar molt finament el pernil amb un ganivet. Mescleu la carn i el pernil amb l’ou batut, el pa mullat desfet i una mica de sal i pebre. Formeu les mandonguilles, enfarineu-les amb la farina d’arròs i fregiu-les en oli ben calent. Reserveu-les. ( Segurament trobareu excessiu el número de mandonguilles que surten només per a tres persones, jo faig servir la meitat i la resta les guard congelades. )&lt;br /&gt;Per fer la salsa talleu l’all i la ceba i fregiu-los en una cassola o una paella fonda amb una mica d’oli i sal. Quan estigui la ceba una mica daurada hi poseu la pastenaga ratllada i després d’un parell de minuts l’ametlla crua molta i remeneu. Afegiu les mandonguilles i el vi blanc i porteu-lo a ebullició. Afegiu el brou de pollastre, rectifiqueu-lo de sal i deixeu-lo coure uns 10-15 minuts fins que trobeu que la salsa està lligada.&lt;br /&gt;Aquesta recepta es una versió casolana d’una recepta de mandonguilles de pollastre trufades que varen fer en la primera edició del programa “Todos contra el chef” de Cuatro. Treballeu la massa feta a una superfície enfarinada un parell de minuts. Esteneu-la formant la base rodona de la pizza.&lt;br /&gt;Poseu a damunt un rajolí d'oli, la tomàtiga estesa, la tonyina i les olives tallades en rodones. Amaniu-lo tot amb una mica de sal i oli. Amb aquesta mescla heu d'omplir totes les meitats de les tomàtigues. Per acabar podeu posar-hi una mica de julivert picat a damunt de cada tomàtiga i un rajolí d'oli. Una vegada cuit passeu-lo per aigua freda en un colador.&lt;br /&gt;En una paella poseu una mica d'oli, feu una truita amb l'ou, talleu-la en juliana i reserveu-la. Talleu també en juliana el pit d'indiot.&lt;br /&gt;A la mateixa paella, amb una mica d'oli hi podeu posar els pèsols i la pastenaga, deixeu que es facin un parell de minuts i després afegiu l'arròs, la truita i el pit d'indiot. Barregeu tots els ingredients i remeneu uns minuts. Quan bulli, afegiu-hi una mica de sal i els espaguetis. Quan estiguin cuits al vostre gust coleu-los, passeu-los per aigua freda i reserveu-los. Perquè no s'aferrin mentres feu la salsa podeu posar una mica d'oli al recipient on tingueu els espaguetis i remenar una mica.&lt;br /&gt;En una torradora feu els talls de bacon. Quan estiguin ben fets els traieu-ho i els trossegeu. Reserveu-los.&lt;br /&gt;Barregeu la nata per cuinar, els formatges, un mica de sal (el pecorino i el parmesano són formatges bastant salats) i pebre negre si vos agrada.&lt;br /&gt;Poseu en una paella al foc una mica d'oli i els espaguetis. Remeneu i en estar calents afegiu la barretja dels formatges. Despres d'un parell de minuts quan els formatges estiguin desfets afegiu el bacon i remeneu uns segons. Els mesos anteriors van ser realment durs, pèrdua de pes, vòmits, diarrees, tristesa...Només podíem esperar la confirmació del diagnòstic mitjançant una biòpsia intestinal. La celiaquia per ara només té un tractament, l’eliminació de la dieta de tot aliment amb gluten. En poc temps el meu fill va començar a millorar visiblement. Ara ja té cinc anys i es un nin sa i feliç.&lt;br /&gt;Afortunadament m’agrada cuinar i no ha suposat per jo un gran problema eliminar el gluten de la majoria del plats que ja feia o adaptar-ne de nous.  La meva intenció en començar aquest blog es compartir aquestes receptes que faig habitualment. Unes son receptes tradicionals, altres plats que em va ensenyar ma mare i d’altres adaptacions de plats trobats en llibres o en Internet.
